Ingredients require to make Bhature:
2 cups All purpose flour (Maida)
1 pouch Yeast
1 cup Yogurt
2 tbsp Vegetable Oil
Salt to taste
Method Of Preparation
Procedure to cook Chole
At first wash and soak the chole for whole night. Pressure cook with little
salt and water for 15 20 minutes. Now heat some oil on medium flame
in a deep pan. Fry some cinnamon, cumin seeds and allow it to splutter. Now
add bay leaves and cloves, saute for few minutes. Add chopped onions,
ginger-garlic paste, green chillies and sauté till the onions become
soft and golden brown. Add turmeric, chili powder and channa masala powder
sauté for some more minutes.
Now add chopped tomatoes and tomato puree and sauté till the oil
starts to separates and tomatoes becomes soft and mushy. Drain the excess
water from the cooked beans add it to the pan with salt and 1 cup water and
mix well. Simmer the flame and cover the lid. Let the mixture cook slowly on
low heat for 20 minutes so that masala can blend well. Keep stirring in the
middle unless it will stick to the pan. Add the chopped coriander leaves,
stir well and turn off the heat. Use few coriander leaves and onion rings to
garnish the Chole.
Procedure to make Bhature
To prepare the bhature, at first sieve the flour and salt into a bowl. Add
grated potato, oil into the mixture of flour. Knead the mixture into firm
dough without using any water. Knead the dough very well till becomes smooth
and pliable. Cover the dough with a wet muslin cloth and keep it aside for
10 minutes. Divide the dough into equal parts and roll out into circles.
Heat oil in a deep pan, fry one batura at a time till the baturas puff up
and both sides turns golden brown. Drain excess oil on paper towel and keep
warm while you fry the remaining.
Serve hot with the chole, sliced onion and lemon wedges.
